UNICORN CAKE

Yield:

1 three-layer 8in x 2in cake

INGREDIENTS:

Cream Cheese Pound Cake:

• 1 1/2 cups Butter

• 1 1/2 cups Cream Cheese

• 3 cups Sugar King Value Refined Sugar

• 8 medium Eggs

• 3 tsp Vanilla

• 3 1/2 cups All-Purpose Flour

• 2 tsp Baking Powder

• 1 1/2 tsp Baking Soda

• 1/2 tsp Salt

• Sugar King Baker’s Food Coloring Gel Pink, Purple, and Blue


Cream Cheese Frosting:

• 3/4 cup Non-Dairy Cream

• 3/4 cup Cream Cheese

• 1/2 cup Butter

• 1 1/2 cups Sugar King Confectioners’ Powdered Sugar



INSTRUCTIONS:

For Cream Cheese Pound Cake:

  1. In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter, cream cheese, and Sugar King Value Refined Sugar for 7 minutes or until light and fluffy.

  2. Add the eggs one at a time, then add the vanilla.

  3. Dry Ingredients: Sift and combine the flour, baking powder, baking soda, and salt.

  4. Slowly incorporate the dry ingredients into the batter.

  5. Divide the batter into 6 bowls and add Sugar King Baker's Food Coloring Gel. Transfer into the baking pans and bake for 15 to 18 minutes. After baking, allow the cakes to rest for 30 minutes before removing them from the cake pans.

For Cream Cheese Frosting:

  1. In the bowl of an electric mixer fitted with the paddle attachment, cream together the cream cheese and butter for 2 minutes or until light and fluffy.

  2. Add Sugar King Confectioners’ Powdered Sugar and whip for another 2 to 3 minutes. Transfer to a bowl.

  3. In the bowl of an electric mixer fitted with the whisk attachment, whisk the non-dairy whipping cream until stiff peaks form.

  4. Fold the whipping cream in 2 parts. Fold 1/2 of the whipped cream into the cream cheese mixture, then fold in the remaining 1/2. Chill the frosting for 15 minutes before coating it on the cake.


Cake Decoration:

  1. Divide the cream cheese frosting into portions and tint with Sugar King Food Coloring Gel Pink and Violet to create pastel pink and pastel violet frosting, or use colors as desired.

  2. Assemble and coat the cake with the colored cream cheese frosting.

  3. Shape the Sugar King Baker’s Fondant into a unicorn horn and ears, then color the fondant as desired. Non-edible decorations may also be used for the horn and ears.

  4. Place the horn and ears on top of the cake.

  5. Decorate the top with royal icing to create the unicorn’s mane, then add the remaining details to complete the design. Refer to the photo for decoration inspiration.
